Description/Job Summary

Cook and supervise a working staff of cooks and food sanitation specialists.

Basic Function/Scope

  • Assumes the responsibilities and duties of the Shift leader in their absence.

  • Direct all Dining Facility Cooks and MA's assigned to their shift.

  • Responsible for the satisfactory accomplishment of all meal preparation, line setup, serving, sanitation, other functions and task.

Primary Duties and Responsibilities

  • Represent the company team in working with military personnel in the dining facilities.

  • Prepares soups, meats, starches, sauces, gravies, and vegetables as required in accordance with the recipe cards.

  • Ensures that all cooks assigned to their shift following instructions on the production schedules and recipe cards

  • Ensures that kitchen maintains safe and sanitary conditions at all times.

  • Conducts on the job training as required.

  • Ensures that all food items are on the serving line at the prescribed time.

  • Samples all food items during preparation and upon completion of preparation to ensure quality is maintained.

  • Ensure all food is properly garnished prior to placing them on the serving line.

  • Ensure that all cooks and servers are familiar with and follow replenishment procedures on the serving line.

  • Ensures that single use disposable gloves are used required by TB Med 530

  • Conduct complete pre-meal sanitation and service inspection of dining facility

  • Ensure that all tasks are conducted in accordance with TB Med 530 guidance.

  • Cooperate with Quality Assurance Surveillance and Preventive Medicine Activity inspections.

  • Ensure that progressive cookery methods are used when practical.

  • Basic Qualifications*

  • Certificate in food handling/sanitation methods, or ServSafe certified preferred.

  • Good customer service skills.

  • Must have solid worth ethics.

  • Experience*

  • Demonstrated history of related Food Service experience preferably with a major institution or the military as a Cook.

Physical Demands

  • Lift and carry up to 50 lbs.

  • Stands and moves within the kitchen area for 6 to 7 hours (excluding break and lunch periods).

  • Some bending and stooping.
